Makes 4 servings
8 slices Baker's Inn 100% Whole Wheat bread,
toasted (optional)
4 tablespoons reduced-fat mayonnaise
3 tablespoons Dijon-style prepared mustard
12 slices roasted or smoked-turkey breast
½ cup guacamole
2 cups mixed salad greens
1 avocado- peeled, pitted and sliced
12 ounces Colby-Monterey Jack cheese, sliced
8 slices tomato
Spread 1 tablespoon mayonnaise on one slice of toast, then spread 2 teaspoons mustard on the other. Arrange the sliced turkey on one side. Spread 2 tablespoons guacamole over the turkey. Pile on ½ cup salad greens, ¼ avocado and 3 ounces cheese. Finish with 2 tomato slices, then place the remaining slice of toast on top.
